Lausanne City Guide – Brasserie du Royal at Royal Savoy

The place

We were already familiar with the splendid five-star hotel Royal Savoy in Lausanne, where we love to have a sweet treat from time to time. Last week, we had the huge pleasure to try out La Brasserie, which is the famous restaurant of the Royal Savoy. The Signature Chef is the well-known three-Michelin starred Alsatian Chef Marc Haeberlin. Julien Krauss is Executive Chef.
Since it is a Brasserie, you will find Brasserie dishes on the menu, but with a modern touch with a perfect execution, or as the Royal Savoy puts it: “high-end Brasserie food”.
The menu changes with the seasons. The current menu is a Winter menu with one star ingredient that is truffle. Both of us being truffle lovers, we were simply enchanted.
We loved the classy and modern interior of the restaurant, with the very comfortable chairs, as you can see in the pictures below. The restaurant is actually quite spacious and there are three rooms, among which one where you can see the cooks working in the kitchen. As I am convinced that gastronomy is a form of art, I really enjoy that because it is like seeing art being made. There is also a veranda, which must be very pleasing and luminous during daytime.

The food

We composed our own menus and here is what we tasted:

Starters

  • Pan-seared scalopps & leeks black truffle vinaigrette
  • Lobster bisque & ceps mushroom stew

Main courses

  • Roasted char fish & crushed potatoes with tarragon and «béarnaise» foam
  • Venison loin & pan-seared mushrooms, roasted pear and «Chartreuse» liquor sauce

Cheese platter

  • Cheeseboard from our region to share: The smaller platter includes Gruyère, Étivaz, Tomme vaudoise and Chèvre frais, along with dried fruit compote, dried apricots, almonds and hazelnuts

Desserts

  • Crunchy chocolate tart and black truffle & truffle ice cream
  • A prototype of a new dessert that is not yet available on the menu that we had the immense luck and honor to try out: based on two flavours that are coffee and whisky

In one word

I have been simply blown away by my experience at the Brasserie, and so was Nicolas. We were expecting a high level of mastery, and our highest hopes were even exceeded. The textures and flavours were simply somptuous. The attention to detail was impressive. For instance, I chose the scallops as a starter and I was surprised to see how much I actually liked that: they were cooked to perfection and the sides did not overwhelm their taste but rather emphasized it. The same goes for the venison: I never really liked such meat because of its strong flavour and smell, but there it was very refined. We were also amazed to taste truffle under a particular form: as an ice cream for dessert, which was strangely delicious!
Also, we have to mention that the staff was really accommodating and caring, as well as very friendly. They made the whole experience even better.

To sum up, we would say that it is an excellent address in Lausanne, probably the best one we know. The menu offers many options, for everyone. No matter what you will choose, it will be surprising and pleasing.


Le lieu

Nous connaissions déjà bien le splendide Royal Savoy, hôtel cinq étoiles à Lausanne, où nous apprécions nous offrir une douceur de temps à autre. La semaine dernière, nous avons eu l’immense plaisir de tester La Brasserie, qui est le fameux restaurant du Royal Savoy. Le Chef Signature du restaurant est le chef alsatien de renom, triplement étoilé Michelin, Marc Haeberlin. Julien Krauss, quant à lui, est le Chef Exécutif.
Ainsi, comme le nom de l’établissement l’indique, ce sont des mets de Brasserie qui sont au menu, mais avec une touche de modernité et une exécution impeccable ou comme le dit le Royal Savoy, “une cuisine créative et unique de brasserie de catégorie supérieure”.
Le menu change au gré des saisons. En ce moment, l’ingrédient star du menu d’hiver est la truffe. Étant de grands amateurs de ce champignon, nous étions ravis.
Nous avons beaucoup apprécié l’intérieur classe et moderne du restaurant, avec des chaises très confortables, que vous pouvez voir dans les photos ci-dessous. Le restaurant est plutôt spacieux et est composé de trois salles, dont une qui offre une vue sur les cuisiniers en action. Comme je considère que la gastronomie est une forme d’art, j’apprécie beaucoup pouvoir voir la cuisine: c’est comme voir des œuvres artistiques en création. Il y a également une véranda, qui doit être très agréable et lumineuse durant la journée.

Le repas

Nous avons composé nos propres menus et voici les plats que nous avons choisis:

Entrées

  • Noix de Saint-Jacques juste saisies & poireaux, vinaigrette à la truffe
  • Bisque de homard & ragoût de cèpes

Plats principaux

  • Omble chevalier rôti & pommes de terre écrasées à l’estragon et siphon de béarnaise
  • Noisettes de chevreuil & poêlée de champignons des bois, poires rôties et jus à la Chartreuse servi avec des spätzles

Fromage

  • Variation de fromages de nos régions & chutney de saison:
    La petite assiette contenait du Gruyère, de l’Étivaz, de la Tomme vaudoise et du chèvre frais, accompagnés d’un chutney de fruits secs, des abricots séchés, ainsi que des amandes et des noisettes.

Desserts

  • Tarte au chocolat croustillant et truffe noire & glace à la truffe
  • Un prototype de nouveau dessert qui n’est pas encore disponible dans le menu, que nous avons eu l’immense chance et honneur de pouvoir tester: il était fondé sur deux saveurs principales, le café et le whisky

En un mot

J’ai été subjuguée par mon expérience à la Brasserie et il en va de même pour Nicolas. Nous attendions un niveau de maîtrise élevé et nos attentes les plus pointues ont été surpassées. Les textures et saveurs étaient simplement somptueuses. L’attention portée au détail était impressionnante. Par exemple, j’ai choisi les noix de Saint-Jacques en entrée, et j’ai découvert qu’en fait, c’est quelque chose que j’adorais. Elles étaient cuites à la perfection et les accompagnements n’ont pas dissimulé leur goût, bien au contraire, leur goût était sublimé. J’ai fait la même découverte quant aux noisettes de chevreuil: je n’avais jamais vraiment apprécié cette viande en raison de ses forts odeur et goût, mais ici, c’était très raffiné. Nous avons également été ravis de tester la truffe sous une forme particulière: en crème glacée en dessert, ce qui était étrangement délicieux!
Il faut également faire mention du personnel, qui a su nous mettre à l’aise, répondre à nos besoins et offrir des réponses aux questions, toujours de manière très aimable. Ce point a rendu notre expérience encore plus belle.

En résumé, nous dirions qu’il s’agit d’une excellente adresse à Lausanne, probablement la meilleure que nous connaissions. Le menu offre de nombreuses options, pour tous les goûts. Et peu importe ce que vous choisirez, le plat sera surprenant et plaisant.
